E is for Edamame Beans

Edamame beans are the young beans of the soy plant and are often referred to as a superfood because they contain protein, fiber and essential nutrients. They are a complete source of protein providing all nine essential amino acids, which means they are an excellent plant-based food for vegetarians and vegans. One cup of cooked edamame beans provides approximately 17g of protein.

Eating edamame beans has many health benefits because they also contain a rich source of vitamins and minerals, below are some of the main one:

  • Vitamin K is needed for blood clotting and supports bone health.
  • Vitamin C and E, as you know by now, are excellent antioxidants that support the immune system, protecting us from disease and needed for healthy skin.
  • A good source of Folate which is essential for cell division and DNA formation which is particularly important during pregnancy.
  • Iron is essential for the production of hemoglobin, a protein in red blood cells, which help carry oxygen throughout the body.

These beans are good for heart health, providing protein and nutrients we need to support good digestion, hormone balance, and bone health. They make a healthy snack, cook before eating by simply boiling or steaming the whole pod for 5 minutes. Then drain and rinse in cold water before podding and sprinkling lightly with sea salt. They are not suitable for people with an allergy to soy.
