Welcome to my latest alphabet letter! This time let us look at Game, a wonderful source of low-fat protein. This time of year is perfect for trying something different and as we all need to reduce our saturated fat intake, why not try pheasant, venison, hare, rabbit, or pigeon, all high in protein and low in fat? 

These are the health benefits:

🦌 They are low in saturated fat and therefore calories when compared with traditional meats from animals raised on farms.

🐇 They are an excellent source of protein.

🐦 Rich in all the B vitamins – which support our nervous systems.

💪 Meat from Game is rich in iron.

🩻 Game contains phosphorous, which is essential for healthy bones and teeth, and potassium which is essential for maintaining healthy cells.

Game meat generally needs longer cooking and it is quite normal for pheasant to hang for as long as three weeks. Any good butcher will help you with this requirement. If you’re anywhere near Warwickshire, I recommend Aubrey Allen in Leamington Spa.

Remember when preparing game to watch out for the lead shot, which is not healthy to ingest, and always take care when eating, as it is easy to miss the small round shot. 

I have cooked and enjoyed pheasant and venison but suggest long slow cooking in red wine 🍷 which will help tenderise the meat and the flavour is then delicious. Enjoy!
